Hello all! You may have noticed that my last two recipes for brownies and crisp both used coconut oil instead of butter. That’s because I recently received a quart of Gold Label Virgin Coconut Oil from Tropical Traditions to try out. I’m thrilled that this coconut oil is organic and HAND-MADE from fresh coconuts.
I’m no noob to coconut oil. I rub it on my face, drink it in my morning tea, and even scramble eggs with it. While the coconut scent is distinct, the flavor is much more subtle. I usually can’t taste it in my eggs after adding salt and pepper or herbs.
Out of curiosity, and because I’m slightly neurotic when it comes to comparing products, I did a smell test of the Tropical Traditions coconut oil alongside a different brand of coconut oil I had at home, and Tropical Traditions surprised me with its freshness. It’s also creamier at room temperature in a way that’s perfect for mixing into baking batter. Unlike some other coconut oils I’ve used, it doesn’t separate or break into clumps when you spoon it out.
Subbing Coconut Oil for Butter in Recipes
Coconut oil is an easy substitute for butter in any recipe. Just use roughly 13 tablespoons of coconut oil plus 3 tablespoons of water or milk to replace a cup of butter. Many websites call for a 1:1 substitution, but because butter is only about 80% fat and the rest is mostly liquid, I would advise against that. If you’re subbing coconut oil for olive oil or any other kind of oil, then a 1:1 substitution is fine!
