I didn’t know the sky could be so big.
Nothing clutters the landscape on the road to the glaciers along the southern coast of Iceland. Only moss and volcanic mountains, a thin line of Aspen trees, the ever shifting clouds and the arctic sun cracking through.
The ice caps are blue and translucent underwater, but white on top where they’ve begun to melt. Sometimes one will flip, and then you can see the pure blue underbelly. We traced our way through them on a boat, the water perfectly still, glass-like. You can feel the power of a jagged wall of ice as you approach, infectious as snow.
If you have a racing mind like mine, go. Climb the sloping banks to the ridge, look down at a panorama of ice floes and gulp in the untamed quiet.
I hope I can share a little of how clear that felt through these photos.

This was absolutely decliious. This was only my 2nd try at using the bread machine first try did not come out so good. I used agave nectar, 1/3 cup. The bread was sweet and the texture was perfect. I am making it again, this time using molasses, because agave is so expensive. I highly recommend this recipe.

I loved the food. They have a lot of salmon rivers and redfish also seemed to be the daily catch everywhere, so the seafood is very fresh and local. My favorite restaurant in Reykjavik was SNAPS, and there was a good bakery and gelato shop on the main shopping street. Also a fun seafood shack by the harbor with great scallop skewers. The Skyr is also to die for, especially the vanilla bean flavor. I ate 5 in one day once 😛
