An addictively tangy, sweet, and salty snack of Chex cereal, popcorn, peanuts, and hazelnuts. Like Chex mix but with only the good parts, according to my roommate.
Hello from China! I baked and photographed a few things to post while I’m away. First up is this popcorn Chex mix. We’re keeping only the yummy Chex cereal and nuts, mixing it up with popcorn, and leaving behind all those pretzels and other silly crackers that everybody always picks out. Now if only I had bagel chips… sounds like my next project 😛
We start with a big bowl of corn Chex and fresh popcorn, throw in a couple handfuls of our favorite nuts, toss it all in a buttery chili lime sauce, then toast it in the oven until the Chex turns crispy and your kitchen starts to smell phenomenal. We use both lime juice and zest for big lime flavor, ancho chili powder for sweet – but not too spicy – chili flavor, and both sugar and salt for that addictive sweet + salty combo. This is gluten-free to boot, so everyone can snack away. We’re all about snacking here!
